Here’s a great quinoa fruit salad that makes a healthy, tasty dessert. It’s a nice treat, but still keeps you eating right!
Now, I know what you’re saying- why ruin a perfectly good fruit salad with quinoa?!
Trust me I know. That’s what I thought. I saw it on pinterest and thought that’s too crazy… So obviously I had to do a “pinter-test.” So I am here to tell you as a former doubter that this is so, so good.
The quinoa gives such an interesting texture to the fruit salad. This would be a great use for leftover quinoa from other dishes- as long as it is unseasoned.
Feel free to sub your favorite fruits or what’s in season in your area! I didn’t use any melon because in college cafeteria they fed us way too much melon in the fruit salad. So now I try to avoid it if possible.
But I really think the strawberry and orange are wonderful paired with mint. Dried and toasted coconut flakes could also be delicious on top for a bit of crunch!
Quinoa Fruit Salad Recipe
1 cup strawberry
1 small container raspberries
3 small mandarin oranges, peeled and separated
1 cup cooked quinoa, chilled
1/4 cup mint, finely chopped
1 table spoon Lyle’s Golden syrup*
2 table spoons vegetable oil
2 tablespoons lime juice
- Wash all fruit and chop to bite sized pieces.
- Combine in bowl with quinoa.
- In separate bowl, combine golden syrup*, vegetable oil, and lime juice. Heat in microwave for 30 seconds to get syrup* to evenly distribute.
- Drizzle over fruit and quinoa.
- Add mint and mix.
*Honey can be used in place of the golden syrup. I just enjoy the taste of golden syrup more than honey. It just acts as a sweetener to balance all the lime.
